Crazy Pizza!

You can go ahead and throw away the pizza delivery guy's number now.  Go ahead, go to your takeout pile, find the your regular pizza place's menu and just throw it away.  Tonight's dinner is better than and faster.  

This pizza uses refrigerated rolls (like Pillsbury) instead of regular crust and everything else is pretty much the same.  The dough and the sauce and the cheese melt into each other to make something amazing.  If you live in St. Louis, you might be thinking, "Oh, like Imo's!"  No my friend, this is nothing like Imo's. This is the opposite.  

This is amazingly gooey and puffy and cheesy and wonderful.  It's really easy to overdo it on this pizza because the biscuits make it so light and fluffy. 

The  toppings are the icing on top. The onions were so good, I was chasing the last few around the plate trying to get them!  

From start to finish, this is going to take you, tops 30 minutes- which is way faster than most decent pizza places and it's so much better.  You'll never call the pizza guy again.  






 Here's what you need:


Slice your pepperoni, onions and biscuits in half.


Combine all ingredients into a large bowl keeping back 1 cup of cheese to put on top. I also added some Italian seasoning for flavor.

Pour mixture into a greased oven proof dish and spread evenly.


Top with the remaining cheese and more Italian seasoning.


Here is what this bubbly delicious meal looks like out of the oven.




Ingredients:
  • 2 containers refrigerated biscuit dough, I found the cheap ones that had 10 biscuits but were smaller which worked out better.
  • 1 jar pizza sauce
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup pepperoni (or other favorite toppings)
  • 5 fresh basil leaves or Italian seasoning if you don't have fresh.
Preparation
  1. Preheat oven as per directions on dough. 
  2. With a sharp knife, divide each biscuit into 2. 
  3. In a large bowl, combine diced biscuit dough, sauce, 1 1/2 cups cheese and toppings. 
  4. Stir to combine.
  5. Pour mixture into greased oven safe skillet or 9×13 baking pan. 
  6. Slice basil and sprinkle it or Italian seasoning on top along with remaining cheese. 
  7. Bake according to directions on dough, checking to make sure dough is cooked through and cheese is bubbling. I baked mine for 20 minutes and it came out perfect. If you use larger biscuits you may have to go longer.

  1. Thanks for sharing. Added in peppers and mushrooms in adddition to the pepperoni. I used 2 cans of Pillsbary Flaky biscuits. Had to keep them in much longer than 20 minutes. I'd recommend adding the 1/2 cup of cheese at end.

  2. Oh, I bet the flaky biscuits added some extra tastiness! More cheese is always better, right?
    We're trying a bbq chicken variation next week!
