Cheeseburger Pie



Cheeseburger pie? For serious?  I yelled at Lee a little when he told me he was making this.  After all, we ARE trying to eat more healthily.  But sometimes, you just have try the deliciousness.   
This crustless pie is a lot like a very meat dense quiche.  The egg is a little surprising, but livens up the flavor of the whole dish.  And of course, when you add cheddar cheese to the top of anything, that makes it even better.  
Now, most of you out there are going to use ground beef for that and that's cool, but we used a ground venison and pork mixture that we had on hand. We served ours with the Polenta Fries that we posted last night... a perfect pairing!

Baked Polenta Fries


Here's what you need:


Preheat oven to 400 degrees.


Saute the meat and onions in a skillet over medium until browned.
Combine baking mix, eggs and milk in a bowl and whisk until smooth.
Pour meat mixture into a greased pie dish.
Add cheese to the top.
Pour the whisked mixture over the top of the cheese.
Bake for 25 minutes.
I served with Baked Polenta Fries with a Spicy Lime Mayo dipping sauce.


Ingredients:

  • 1 lb lean (at least 80%) ground beef
  • 1 large onion, chopped (1 cup)
  • 1/2 teaspoon salt
  • 1 cup shredded Cheddar cheese 
  • 1/2 cup baking mix (Bisquik, Jiffy, whatever works for you)
  • 1 cup milk
  • 2 eggs

Directions:

  1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  2. Saute the meat and onions in a skillet over medium until browned.
  3. Combine baking mix, eggs and milk in a bowl and whisk until smooth.
  4. Pour meat mixture into a greased pie dish.
  5. Add cheese to the top.
  6. Pour the whisked mixture over the top of the cheese.
  7. Bake for 25 minutes.
