So the last three recipes are all in preparation for this great dish. We both had been craving sushi lately and didn't want to splurge on it. We've tried making our own before, but frankly, that was something that was tough, even for Lee! So we were looking at different kinds of lettuce wraps and came up with this awesome plate of happiness.
This was definitely a knife and fork wrap, definitely messy, but oh so good. It was the next best thing to going out for real sushi... and I'm not easily fooled!
This recipe has many components but can be made ahead and then parts can be used for other meals. The first two recipes are used as a topper for our sushi salad and can be left out as the salads were great without them.

Pickled Tomato and Avocado Salsa
Here's what you need for the Sushi Salad Bowls:
On the bottom right is a quick miso glaze or "eel sauce" that consist of 2 tablespoons of red miso paste, 1 tablespoon soy sauce, 3 tablespoon rice wine vinegar, 2 tablespoon honey, 1 tablespoon sweet chili sauce, 1 tablespoon brown sugar and sirracha sauce as needed for some heat. The it comes out just like spicy sushi spices!
Preparation:
Make the rice as directed on the box and set aside to cool completely.
Peel and slice all your vegetables and avocados and place on a plate with the spouts and crab meat pieces. Here's what everything looked like right before I started putting the salad together.
What's nice about this type of recipe is that everyone can make their own type of salad and add whatever toppings they like, it's pretty much like a buffet line.
Here's how I did ours:
I took the lettuce and filled the bottom with a little brown rice (about 1/2 cup per bowl, I made two bowls per person and it was very filling). Next I sprinkled the rice with the Nori powder and topped it with about 4 -5 pieces of crab meat and then drizzled the "eel sauce" on top of that. Then comes the vegetables, sprouts and avocados in any order you like. Top that with either the Peanut Slaw, Pickled Tomato and Avocado Salsa or both. Finally I sprinkled a little more peanuts and Nori powder on top.

Directions:
- Prepare Nori, Peanut Slaw, "Eel Sauce", Pickled Tomato and Avocado Salsa

- Top with veggies in any order you want.
